Quick Lunches (Curried Rice and Peas)

Substitute 1-1/2 cups broccoli florets for the celery and 1 cup quartered mushrooms for the carrots. Or you may wish to use these vegetables in addition to the celery and carrots.Enjoy!!!
Ingredients
- Pre-cook 1 cup of Basmati rice and put into plastic lunch box.
- Add 1-2 cups of frozen peas.
- Sprinkle generously with curry powder. I use about 2 teaspoons.
- Salt if desired.
Directions
At work, stir, then nuke for 5 minutes.
