Paula's RAW-some Snacks!

Serves: 20-24
Additional information: Sauce:
- 1 1/2 teaspoon Grated or ground ginger
- 1/4 cup vegan rice wine vinegar
- 3 tablespoon canola oil
- 1 teaspoon sesame oil or tahini
- 2 tablespoon soy sauce or tamari
- 2 tablespoon vegan brown sugar
- 2 cloves garlic, pressed or minced
- juice of one lemon
- 1/2 teaspoon Red pepper flakes
- 1/4 cup chopped cilantro
Ingredients
- All ingredients should be Raw and Organic.
- "Nuts":
- 1/2 cup sunflower seeds
- 1 cup pecans
- 1 cup pistachios
- 1/2 cup cashews
- 1/2 cup tomato juice (organic)
- Produce:
- 7 stems fresh parsley
- 2 carrots
- 2 stalks celery
- 1/3 onion
- 1/2 bell pepper
- 1 clove fresh garlic
- Herbs: (These are dried and not irradiated, but you use the fresh equivalent too.)
- 1 tablespoon basil
- 1/4 teaspoon chili powder
- 1 teaspoon tarragon
- 1 teaspoon sea salt
- 1 teaspoon fresh cracked black pepper
Directions
Place all "Nuts" in a glassbowl. Add organic tomato juice and stir.Let soak 2 to 4 hours. Puree allingredients in a food processor,stopping to stir midway through.Blending is easier if you start with theProduce, add Herbs, then Nuts last--DONOT DRAIN NUTS.
Make patties or bars out of combinedmixture. Make them as thin as possibleand place in food dehydrator and dry for12-24 hours (or until dry). Turn pattiesmidway through.
If you do not have a dehydrator, preheatoven on lowest setting (mine was 170degrees) and dry for 5 to 6 hours. Pattyup the mixture, and place it on cookiesheets lined with paper towel. Thishelps them dry and not stick. Turn themover after 2 or 3 hours. If you likeyour bars really crisp (like me) itwould be good to check them near the endand see if they need more time.
