Additional information: Variation:
Substitute 1-1/2 cups broccoli florets for the celery and 1 cup quartered mushrooms for the carrots. Or you may wish to use these vegetables in addition to the celery and carrots.Enjoy!!!
Ingredients
- 1 onion, chopped
- 3 to 6 cloves garlic, minced (depending on how much garlic you like)
- 2 teaspoons dried rosemary
- 2 - 16 oz cans of great northern beans, with liquid (or 1/2 cup dried beans, soaked and cooked)
- 2 cups dried pasta (such as gnocchi), cooked al dente and drained
- 1 cup vegetable stock
- 2 Tablespoons tomato paste
- salt and black pepper to taste
Directions
Cook onion, garlic and rosemary in 1/3 cup water until onions are soft. Add beans, pasta, stock and tomato paste and bring to a boil (you may need to add water). Reduce heat and simmer for 30 minutes. Add salt and plenty of freshly ground black pepper to taste.
