Italian Hot Dogs

Additional information: Sauce:
- 1 1/2 teaspoon Grated or ground ginger
- 1/4 cup vegan rice wine vinegar
- 3 tablespoon canola oil
- 1 teaspoon sesame oil or tahini
- 2 tablespoon soy sauce or tamari
- 2 tablespoon vegan brown sugar
- 2 cloves garlic, pressed or minced
- juice of one lemon
- 1/2 teaspoon Red pepper flakes
- 1/4 cup chopped cilantro
Ingredients
- 4 medium potatoes, peeled and sliced
- 1 large onion, thinly sliced
- 1 green pepper, thinly sliced
- 6 fat-free tofu hot dogs
- 2 loaves pizza vegan bread or 4 large pitas
Directions
Put potatoes in a microwave safe dish, cover and microwave on high for 8-10 minutes or until potatoes are done. Spray a LARGE non-stick skillet with a little cooking spray, add onions and saute until they begin to turn brown. Add pepper, cooked potatoes and tofu dogs (sliced). Cook until all is hot. Stuff into the pizza vegan bread (cut into halves) or the pitas. Serve with some ketchup, mustard or spaghetti sauce, if desired.
