Ginger Mint Fruit Salad

Additional information: Note: Add 2 Tbsp. Lite soysauce. Blend until smooth.
In buttered 9-11 inch pyrex dish alternate ingredients as follows: potatoes, gluty mixture, soycheese, tomato sauce, ending
with cheese on top.
Put in oven bake at 350 degrees Farenheit for 30-35 minutes or until browning occurs at top (cheese is bubbly!!!)
Fat: less than 7 grams!* Cholesterol: less than 10 grams!*
*= Depends on chosen fat use
Ingredients
- 1 lime
- 1 tablespoon/15 mL fresh ginger, minced
- 1 tablespoon/15 mL fresh mint, minced
- 3 kiwis
- 2 oranges
- 2 peaches
- 1-2 apples
- 1 grapefruit
- 1 mango
- 1/2 pineapple
Directions
In a small bowl, squeeze the juicefrom the lime, add ginger and mint.Set aside.
Chop all fruit (I like toleave the fruit unpeeled when possiblefor texture and nutritional value). Combine in a bowl with lime mixtureand let it sit for at least 15 min,tossing occasionally.
Garnish withmint leaves.
