Fruit and Veggie Pizza

Additional information: Variation:
Substitute 1-1/2 cups broccoli florets for the celery and 1 cup quartered mushrooms for the carrots. Or you may wish to use these vegetables in addition to the celery and carrots.Enjoy!!!
Ingredients
- pre-made pizza crust or home made pizza dough
- 1/2 of 796ml canned diced tomato
- 2 oz firm tofu, cut into small cubes
- red onion to taste
- 1 tablespoon oregano
- 1 tablespoon basil
- diced red bell pepper to taste
- pineapple, diced (optional)
- as much soy cheese as you want
Directions
If using homemade dough, roll it outinto the desired shape (rectangle,circle, etc.
Sauce: blend the tomato in a foodprocessor. After adding tofu, blenduntil smooth. Stir in oregano and Basil,and set aside.
Pizza: brush sauce onto crust using bbqsauce brush. Sprinkle on otheringredients and place in oven,preheated at 425 degrees. Bake untilvegan cheese is melted for pre-baked pizzacrust; and bake 15-25 minutes for pizzadough. Serve and enjoy!
Note: it's a good idea to put thepineapple on the very top, since it hasa tendency to make the crust soggy.
