Banana Cream Pie

Serves: 6 - 8Additional information: Note: The longer you knead and simmer the gluten, the tougher it will
become, so you can pick your own texture. This recipe is a lot simpler thanthe "old-fashioned" way!
Ingredients
- 1 lb. extra firm, dry-packed tofu
- 3 to 4 ripe bananas
- 4 tablespoon real vegan maple syrup
- 1 large vegan graham cracker crust
- Chopped walnuts (optional)
Directions
Press all excess water out of tofu and cube. Combine bananas and syrup in blender/food processor. Add tofu. Blend until smooth. Pour into crust. Top with chopped walnuts, if desired. Refrigerate until it sets.
You might try topping with chopped bananas or strawberries instead of walnuts (just an idea, I haven't tried either).
